Chole Bhature, A Blend of Chickpea Curry and Fried Bread

Ingredients

For Chole (Chickpea Curry)

  • 2 cups chickpeas (chole), soaked overnight and boiled until tender
  • 2 tablespoons ghee or vegetable oil
  • 1 teaspoon cumin seeds
  • 2 onions, finely chopped
  • 2 teaspoons ginger-garlic paste
  • 2 green chilies, slit lengthwise
  • 2 tomatoes, pureed
  • 2 teaspoons chole masala (available in stores)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust according to your spice preference)
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • Lemon wedges (for serving)

For Bhature (Fried Bread)

  • 2 cups all-purpose flour
  • 1/2 cup plain yogurt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon ghee or vegetable oil
  • Salt to taste
  • Water (as needed, for kneading the dough)
  • Vegetable oil (for frying)

Instructions

For Chole (Chickpea Curry)

  1. Heat vegetable oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds until aromatic.

  2. Add the finely chopped onions to the pan and sauté until they turn golden brown.

  3. Add ginger-garlic paste and slit green chilies. Sauté for a minute until the raw aroma dissipates.

  4. Add the tomato puree to the pan and cook until the oil separates from the masala.

  5. Stir in the chole masala, ground cumin, ground coriander, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes to allow the flavors to meld together.

  6. Add the boiled chickpeas to the pan along with some water (as needed) to achieve the desired consistency. Mix well and simmer for 15-20 minutes, allowing the flavors to infuse into the chickpeas.

  7. Garnish with freshly chopped coriander leaves and squeeze some lemon juice over the chole before serving.

For Bhature (Fried Bread)

  1. In a large mixing bowl, combine all-purpose flour, plain yogurt, baking powder, baking soda, ghee or vegetable oil, and salt. Mix well.

  2. Gradually add water and knead the dough until it is smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.

  3. Divide the dough into small portions and roll each portion into a circular shape using a rolling pin.

  4. Heat vegetable oil in a deep frying pan or kadai over medium-high heat.

  5. Gently slide the rolled dough into the hot oil and fry until it puffs up and turns golden brown on both sides. Flip the bhature as needed for even frying.

  6. Remove the fried bhature from the oil and place them on a paper towel to drain excess oil.

Serve the Chole (chickpea curry) hot with the Bhature (fried bread). Garnish with fresh coriander leaves and enjoy the delicious and flavorful Chole Bhature!
