Ingredients: For the Chicken Marinade:

  • 500 grams boneless chicken, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 tablespoon lemon juice
  • Salt to taste

For the Butter Chicken:

  • 2 tablespoons butter
  • 1 tablespoon oil
  • 1 large onion, finely chopped
  • 2 teaspoons ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust according to your spice preference)
  • 1/2 teaspoon turmeric powder
  • 1 cup tomato puree
  • 1/2 cup heavy cream
  • 1 tablespoon honey or sugar (optional)
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

Instructions:

  1. In a mixing bowl, combine the yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, and salt. Add the chicken pieces and mix well, ensuring they are coated with the marinade. Cover the bowl and let it marinate in the refrigerator for 1-2 hours (optional).

  2. Heat butter and oil in a pan over medium heat. Add the finely chopped onion and sauté until it turns golden brown.

  3. Add ginger-garlic paste and sauté for a minute until the raw aroma dissipates.

  4. Add cumin powder, coriander powder, red chili powder, turmeric powder, and salt. Stir well and cook for another minute.

  5. Add tomato puree and cook the mixture for 5-7 minutes until the oil separates from the masala.

  6. Add the marinated chicken (if marinated) along with any remaining marinade. Stir well and cook for about 10 minutes until the chicken is cooked through.

  7. Reduce the heat to low and pour in the heavy cream. Stir well to combine and simmer for another 5 minutes, allowing the flavors to meld together.

  8. Taste the curry and adjust the seasoning. If desired, add honey or sugar to balance the flavors.

  9. Garnish with freshly chopped coriander leaves.

  10. Serve the butter chicken hot with naan bread or steamed rice, and enjoy the rich and creamy flavors!
