Cooking Time: 20 minutes

Ingredients:

  • 1 large onion, thinly sliced
  • 1 medium-sized potato, peeled and thinly sliced
  • 1 cup gram flour (besan)
  • 2 tablespoons rice flour
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder (adjust according to your spice preference)
  • 1/2 teaspoon garam masala powder
  • 1/2 teaspoon baking soda
  • Salt to taste
  • Water, as needed
  • Vegetable oil for frying
  • Fresh coriander leaves, chopped (for garnish)

Instructions:

  1. In a mixing bowl, combine gram flour, rice flour, cumin seeds, red chili powder, garam masala powder, baking soda, and salt. Mix well.
  2. Gradually add water to the dry ingredients, whisking continuously, until you get a smooth and thick batter consistency.
  3. Add the thinly sliced onions and potatoes to the batter. Mix well, ensuring that all the slices are coated with the batter.
  4. Heat vegetable oil in a deep pan over medium heat.
  5. Once the oil is hot, drop small portions of the batter-coated onion and potato slices into the oil. Fry them in batches until they turn golden brown and crispy.
  6. Using a slotted spoon, remove the pakoras from the oil and drain them on a kitchen paper towel to remove excess oil.
  7. Repeat the frying process with the remaining batter and slices until all the pakoras are cooked.
  8. Garnish the pakoras with freshly chopped coriander leaves.
  9. Serve the onion and potato pakoras hot with mint chutney, tamarind chutney, or ketchup.
