Ingredients:
- 1 large onion, thinly sliced
- 1 medium-sized potato, peeled and thinly sliced
- 1 cup gram flour (besan)
- 2 tablespoons rice flour
- 1 teaspoon cumin seeds
- 1/2 teaspoon red chili powder (adjust according to your spice preference)
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon baking soda
- Salt to taste
- Water, as needed
- Vegetable oil for frying
- Fresh coriander leaves, chopped (for garnish)
Instructions:
- In a mixing bowl, combine gram flour, rice flour, cumin seeds, red chili powder, garam masala powder, baking soda, and salt. Mix well.
- Gradually add water to the dry ingredients, whisking continuously, until you get a smooth and thick batter consistency.
- Add the thinly sliced onions and potatoes to the batter. Mix well, ensuring that all the slices are coated with the batter.
- Heat vegetable oil in a deep pan over medium heat.
- Once the oil is hot, drop small portions of the batter-coated onion and potato slices into the oil. Fry them in batches until they turn golden brown and crispy.
- Using a slotted spoon, remove the pakoras from the oil and drain them on a kitchen paper towel to remove excess oil.
- Repeat the frying process with the remaining batter and slices until all the pakoras are cooked.
- Garnish the pakoras with freshly chopped coriander leaves.
- Serve the onion and potato pakoras hot with mint chutney, tamarind chutney, or ketchup.
