Jalebi Delight, Crispy Swirls of Deep-Fried Batter Soaked in Sweet Sugar Syrup

Ingredients

For the Batter

  • 1 cup all-purpose flour
  • 2 tablespoons chickpea flour (besan)
  • 1/2 teaspoon active dry yeast
  • 1/2 teaspoon cardamom powder
  • 1 tablespoon ghee or melted butter
  • 1 tablespoon yogurt
  • 1/2 cup warm water (approximately)

For the Sugar Syrup:

  • 1 cup sugar
  • 1/2 cup water
  • 1/2 teaspoon cardamom powder
  • A few strands of saffron (optional)
  • 1/2 teaspoon rose water (optional)
  • Ghee or oil for deep frying

Instructions:

  1. In a mixing bowl, combine the all-purpose flour, chickpea flour, yeast, cardamom powder, ghee or melted butter, and yogurt. Mix well.

  2. Gradually add warm water to the flour mixture and mix until you have a smooth and thick batter. The batter should be thick enough to coat the back of a spoon. Cover the bowl and let the batter rest for about an hour at room temperature. This will allow the batter to ferment and develop flavors.

  3. While the batter is resting, prepare the sugar syrup. In a saucepan, combine sugar and water. Heat over medium heat until the sugar dissolves completely, stirring occasionally.

  4. Add cardamom powder, saffron strands (if using), and rose water (if using) to the sugar syrup. Simmer the syrup for another 5 minutes until it slightly thickens. Remove from heat and keep it warm.

  5. Heat ghee or oil in a deep frying pan or kadai over medium heat.

  6. Fill the Jalebi batter into a squeeze bottle or a piping bag fitted with a small nozzle. The nozzle should have a small round opening.

  7. Squeeze the batter in a swirling motion, starting from the center and moving outward to form pretzel-shaped swirls. Fry a few Jalebis at a time, depending on the size of your pan. Be careful not to overcrowd the pan.

  8. Fry the Jalebis until they turn golden brown and crispy. Flip them once to ensure even cooking. Remove them from the oil and drain excess oil on a paper towel.

  9. Dip the fried Jalebis into the warm sugar syrup, making sure to coat them completely. Allow them to soak in the syrup for a few seconds, then remove and transfer to a serving plate.

  10. Serve the Jalebis warm or at room temperature. Enjoy the sweet and crispy delight as a standalone dessert or pair it with rabri (sweetened condensed milk) for an extra indulgence.
